Basil & Cream Cheese Orzo


Ingredients (makes 2 portions)

  • 100g dried orzo

  • 20g pine nuts

  • 60g garlic & herb cream cheese

  • 1 tbsp extra virgin olive oil

  • 30g fresh basil

  • 2 cloves garlic

  • Juice from 1 lemon

  • Salt

  • Pepper



Method

1. In a dry frying pan (i.e. no oil), toast the pine nuts over a medium-high heat for ~5 minutes or until starting to look golden. Be careful to keep them moving as they can burn very quickly!

2. Add your orzo to a pan of salted boiling water and cook for 8-10 minutes. Meanwhile add the remaining ingredients to a blender and blitz into a thick sauce - you may want to add a couple of splashes of starchy pasta water to loosen it up a bit (who am I, Mob Kitchen?!)

3. Drain the orzo and return to the pan, although off the heat. Add the basil & cream cheese sauce and mix well. Serve up with your choice of protein & veggies!
