A true TMK classic - I know people who make this almost once a week!


Ingredients (serves 4)

Prep time: 5 mins Cooking time: 45 mins

  • 1 pack of chicken thighs

  • Half a chorizo ring

  • 3-4 medium sized potatoes (I used Maris Piper)

  • 2 red peppers

  • 3 tsp garlic puree

  • Chilli flakes to taste

  • 3 tsp smoked paprika

  • 2 tsp garlic granules

  • 2 tsp dried oregano

  • Olive oil

  • 1 block feta

  • 3 spring onions

  • Fresh coriander (optional)


Equipment required

  • Large mixing bowl

  • Baking tray/roasting tin



Method

  1. Preheat your oven to 200degC. Cut the chicken thighs & potatoes into similar size chunks and the chorizo into slices (about the same as a pound coin). Slice up the peppers.

  2. Add all of these ingredients to a large mixing bowl with the garlic puree, paprika, chilli flakes, garlic granules and oregano as well as a large helping of olive oil. Mix well until everything is coated in oil, herbs & spices. Lay the mixture out on a baking tray in an even layer - use two trays if it looks too crowded.

  3. Roast in the oven for 45 minutes, checking and shaking the tray regularly. Meanwhile, chop up the feta, coriander & spring onions. Add the feta for the last 5 minutes of cooking. Remove from the oven and let it cool for a couple of minutes, before topping with the spring onions & coriander. Just like that!
