Ingredients (serves 4)

Prep time: 5 mins Cooking time: 30-40 mins

  • 1 onion

  • 3 cloves garlic, crushed

  • 2 tsp smoked paprika

  • 2 tsp garlic powder

  • 1 500g carton passata

  • 250ml apple juice

  • 3 tbsp brown sugar

  • 3 capfuls of red wine vinegar

  • Soy sauce

  • Worcestershire sauce

  • Salt

  • Pepper

Method

  1. Chop the onion into thin strips. Heat a drizzle of olive oil in a sauce pan over a medium high heat. Fry the onion gently for 5 minutes until soft. Add the garlic and fry for a further minute. Add the paprika, garlic powder and salt & pepper to the onion and mix until well coated and fragrant.

  2. Add the passata, then fill the carton halfway with apple juice and add that to the pan too. And the sugar and red wine vinegar, plus a dash of soy sauce and Worcestershire sauce. Taste & season if required - you can add more sugar or vinegar to adjust the sweet or sourness.

  3. Bubble on a medium heat for 30-40 minutes, stirring occasionally, until thick and sticky. The sugar should caramelise into a thick, glossy sauce. Dip, glaze, marinade, coat, drizzle... Do all the saucy things you like!
