Honey Chilli Halloumi & Charred Nectarine Salad

Who says salads have to be boring?


Ingredients (serves 2)

Prep time: 30 mins Cooking time: 5-10 mins

  • 2 ripe nectarines

  • 150g halloumi

  • 2 tbsp runny honey

  • 1 tsp dried chilli flakes

  • Salad leaves of your choice

  • Juice from half a lemon or lime (optional)


Equipment required

  • Two frying pans

Can also be served with some grilled chicken for extra protein.


Method

  1. Mix the honey and chilli flakes in a bowl. Chop the halloumi into strips and coat in the spicy honey. Set aside for 30 minutes.

  2. Cut the nectarines in half and remove the stone, then cut each half into 4 so you have 8 segments per nectarine.

  3. Heat two frying pans over a medium-high heat. Add the nectarines to one pan and the halloumi to another - no oil required, they will both cook in their own juice. Cook for a couple of minutes on one side, before turning and cooking the same on the other. Cook until the halloumi is golden brown and the nectarines are charred & caramelised but not burnt.

  4. Top a large handful of salad leaves with the halloumi & nectarines. Squeeze the lime or lemon over the top and tuck in. Nailed it.
