Mexican Feta
Your new BBQ bestie - the summer side dish of dreams.
Ingredients (serves 2)
Prep time: 15 mins Cooking time: 5 mins
325g sweetcorn
1 block feta
1 red onion
As many jalapenos as you want, plus 1-2 tsps of the brine
2 cloves garlic, crushed
1 tsp mint sauce or a few mint leaves
15g fresh coriander
3 limes
3-4 tbsp mayo
Hot sauce to taste
Salt
Pepper

Method
Drain the sweetcorn. Heat a frying pan (no oil) over a medium heat and toast the sweetcorn for ~5 minutes until the kernels are starting to char. Leave aside to cool.
Roughly chop the feta into cubes and add to a large mixing bowl. Dice up the red onion & crush the garlic and add those in. Finely chop the jalapenos and add to the bowl, along with a couple of teaspoons of the brine.
Chop up the herbs and add these too. Add the cooled corn, the juice from the limes, the hot sauce and the mayo. Season and mix everything well.
Leave in the fridge for a few hours if you can, removing about 20 minutes before serving. Mix just before serving and enjoy your BBQ side of dreams!
